What it is

Fresh, not dried

Oro Giallo have been making pasta in Contursi Terme for about fifty years. This is their fresh line — selected semolina at 13.5% protein and a low water percentage, which is why it holds its bite instead of going soft in the pot.

It cooks in a fraction of the time dry pasta needs, and it comes off the boil with a rough surface that sauce actually clings to. Keep it cold and check the date on the bag.
